Pearl’s Autumn Salad:

2 to 3 bunches of arugula or other salad greens

2 tablespoons fresh mint or fennel

3 medium mandarin oranges peeled, halved and sliced

1 cluster red grapes, halved

½ small red onion thinly sliced

½ cup garbanzo beans

½ cup salted roasted sunflower seeds

¼ cup craisins

Pumpkin Maple Vinaigrette

Place salad greens and mint or fennel in a medium-size bowl. Drizzle with 2 tablespoons of the Pumpkin Maple Vinaigrette. Toss gently to coat leaves with dressing. Add oranges, grapes, red onion and chickpeas. Toss again. Turn salad out onto a serving platter and drizzle lightly with more dressing. Top with craisins and sunflower seeds. Serve extra dressing at the table.
